Punxsutawney Phil saw his shadow this morning meaning we will have six more weeks of winter. That's okay Phil! If the winter continues as mild as it has been, we'll take it.
Let's celebrate with some groundhog cookies!
Spicy Groundhog Cookies
2 c sifted flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ginger
1/2 tsp cloves
3/4 tsp cinnamon
1/2 c soft butter
1 c sugar
1/2 c molasses
1 egg yolk
1 egg slightly beaten
Raisins or mini chips for eyes
Sift flour, salt, soda, baking powder, and spices together. Set aside. Cream butter and sugar together until fluffy. Blend in molasses and egg yolk. Stir in flour mixture and mix well. Form into ball. Wrap in plastic and chill several hours. Roll between waxed paper to 1/8 inches thick. Cut our cookies with floured cookie cutter. Brush lightly with beaten egg. Decorate with eye.
Bake 8 to 10 minutes at 350° Makes about 4 dozen

Groundhog cookies! What a great idea! I want a groundhog cookie cutter! We have had a good winter so far but it's not over yet! We have to have at least a few days of snow, but NO BLIZZARD!
